Jalapeño Watermelon Margaritas

The holiday weekend is here! While Labor Day may signify the end of summer everywhere else in the U.S., Florida will be continuing the party until at least November. For those of you mourning the end of fruity beverages, BBQs, and pool parties, I have created a special "so long sweet summer" cocktail just for you! I absolutely love this drink because of the short ingredient list, in-season fruit, and just a touch of natural sweetness. Here is my simple yet refreshing jalapeño watermelon margarita!


Ingredients

  • 1 cup Silver Tequila - I love Milagro, but any will work!

  • ¼ cup freshly squeezed lime juice (plus lime wedges for serving)

  • 4 cups fresh cubed watermelon

  • 1 small jalapeño, thinly sliced

  • Ice

Instructions

  1. Puree watermelon in a blender until smooth. Strain through a fine-mesh sieve (a fine strainer, cheesecloth, or nut milk bag will work) and transfer the liquid to a large pitcher or measuring cup. Discard the pulp.

  2. Stir in tequila and lime juice.

  3. Fill 6 glasses with ice and the margarita mixture. Add a few jalapeño slices to each drink and serve with lime wedges.

Notes

This beverage is naturally sweetened with fresh watermelon juice, but you can always add a touch of agave or triple sec if you desire more! You can also blend with ice for a frozen drink while enjoying your last days by the pool. Add additional jalapeño slices if you dare!
